Belle’s Chili Feta Eggs
Belle cracks an egg into a ring of feta and folds it hot into a charred tortilla for whoever comes in hungry.
- Serves 1
- About 10 minutes
Ingredients
You’ll wantsmall pan with a lid and dry pan for charring the tortilla.
Method
Big steps, and the screen stays awake where your phone allows it.
- Heat a small pan over medium heat. A nonstick pan needs no oil; oil cast iron lightly.
- Crumble the feta in a ring around the edge of the pan.
- When the feta starts to bubble, spoon the chili crisp into the middle.
- Crack the egg on top. Season with black pepper and pepper flakes. No salt needed, the feta is salty.
- Cover and cook 3–5 minutes, until the white is set, the yolk is still runny and the feta is lacy and golden. Turn the heat down if the feta browns before the white sets.
- Char the tortilla in a dry pan, spread on the avocado and squeeze over the lime.
- Slide the egg on, fold it up and let the yolk run.
Inspired by @graceelkus’s original feta fried egg.
