Ingredients

You’ll wantskillet and sharp knife.

Method

  1. Cook the bacon until crisp, and scramble the egg just until set.
  2. Cut one slit in the tortilla, from the centre out to the edge closest to you.
  3. Fill the four quarters: egg bottom right, bacon top right, avocado top left, cheese bottom left.
  4. Fold the egg quarter up onto the bacon, then fold that onto the avocado, then down onto the cheese to make a triangle.
  5. Melt the butter in a skillet over medium heat and toast the wrap until golden and crisp.
  6. Add a little more butter, flip, and toast the second side until the cheese melts.
  7. Cut it in half and eat it warm.
  8. Tip: Cut the slit straight from the centre to the edge.
