Belle’s Apple Slice Waffles

Belle presses thick apple slices in a cast-iron waffle iron on the attic woodstove and rolls them in cinnamon sugar for whoever comes up.

Painted golden waffled apple slices dusted with cinnamon sugar, piled on a red checked paper with a small cup of caramel and steam rising.

Ingredients

You’ll wantcast-iron stovetop waffle iron, skewer, mixing bowl and whisk.

Method

  1. Halve the apples, cut out the cores and slice them half an inch thick.
  2. Whisk the dry ingredients, then whisk in the wet. Rest the batter 5 minutes.
  3. Heat a waffle iron and brush it with butter. A stovetop iron goes over medium heat; an electric one works too.
  4. Spear a slice on a skewer and dip it in the batter.
  5. Lay it on the iron, close the lid and cook until golden on both sides.
  6. Toss it in cinnamon sugar while it is warm.
  7. Dip in caramel and eat warm.
  8. Tip: Best warm; they soften as they sit.
