Method
Big steps, and the screen stays awake where your phone allows it.
- Roll the beef into 6 even balls.
- Set a ball on a tortilla and press it out into a thin layer, almost to the edge.
- Season the meat side with salt and pepper.
- Heat a cast iron pan over medium-high. Lay the tortilla in meat side down and press it flat with a spatula. Cook 2–3 minutes, until the beef is deeply browned.
- Flip. Lay a slice of cheese on the beef and let the tortilla crisp 1–2 minutes.
- Move it to a board and top with lettuce, pickles, guacamole and burger sauce.
- Fold in half and toast both sides until crisp.
- Tip: Use lean beef (90-95%). Cook until no pink shows and the beef reads 160°F (71°C).
