You’ll want7x3.4 in loaf pan, small pot, whisk, mixing bowl, rolling pin, knife, pastry brush and foil.
Method
Big steps, and the screen stays awake where your phone allows it.
- Roast: Cut the top off the garlic, drizzle with oil, wrap in foil and roast at 350°F (180°C) 45-60 min, till soft as butter.
- Paste: Whisk the flour and milk over medium heat till thick like pudding. Cool. This keeps the bread soft for days.
- Dough: Knead the flour, sugar, salt, yeast, paste, milk, cream cheese and egg 10 min. Knead in the butter till smooth. Rise 1.5-2 h, till doubled.
- Butter: Mash the roasted garlic into the butter with the parsley and salt.
- Stack: Roll to 12x12 in, spread the butter, add the mozzarella, cut 12 squares and stand them in the pan. Rise 30-45 min.
- Bake: Brush with egg wash, add more cheese and bake 35-40 min till deep golden. Then pull.
- Tip: If it won't pull apart, let it rise until doubled and puffy. Cool the roasted garlic 10 minutes before squeezing.
