Belle’s Thanksgiving Dinner Rolls

Dense, heavy rolls are usually the pan. Belle bakes hers in a metal pan, not glass, and lets them rest only till puffy, so they bake up soft.

  • 12 rolls
  • About 2 hours, mostly rising
A dark metal pan of twelve golden, glossy buttered dinner rolls, one pulled open to show the soft inside, on a candlelit Thanksgiving table with pies and a cornucopia.

Ingredients

You’ll wanta 9x13 metal baking pan, a large mixing bowl and a pastry brush.

Method

  1. Bloom: Milk, yeast and sugar, 10 min till foamy. Instant yeast? No wait.
  2. Mix: Add butter, egg, salt, then 3 cups flour. Last 1/2 cup only if sticky.
  3. Knead: 10 min (12 by hand), till smooth.
  4. Rise: Oiled bowl, covered, 1 hour till doubled. Punch down.
  5. Shape: 12 balls, edges under, in a greased METAL pan. Glass bakes them dense.
