Belle’s Spiderweb Eyeball Eggs

Belle taps the shells gently with a spoon, little cracks spaced apart, and leaves the ends alone: that is what makes a web instead of a purple blob.

  • Makes 14 halves
  • Dye soak overnight
A painted dark plate of deviled egg halves with purple spiderweb-marbled whites, green dill filling, black olive pupils and bacon eyelids, beside a small carved pumpkin.

Ingredients

You’ll wanta spoon, a glass bowl and a piping bag.

Method

  1. Boil: Eggs into cold water, bring to a rolling boil, cover, off the heat 9 min. Ice bath.
  2. Crack: Tap fine, spaced cracks with the back of a spoon. Keep the shell on; leave the ends alone.
  3. Dye: Glass bowl, colouring + cold water over the eggs. Cover and chill overnight (peek at 8-10 h).
  4. Peel: Peel under cool water and halve lengthwise.
  5. Fill: Mash the yolks with the mayo, mustard, pickle juice, dill, green onion and seasoning; tint green. Pipe back in.
  6. Eyes: An olive ring for the pupil, a shard of bacon for the eyelid. Serve chilled.
  7. Tip: Use ordinary liquid food colouring. Beet, tea and plant dyes won't colour through the shell, and under 6 hours won't colour.
